From this point on, add the milk a little at a time, making sure each addition is fully incorporated before adding more. The milk can be cold straight from the fridge, so there's no need to bring it to room temperature first.

Keep moving the whisk in the same direction: it takes a few extra seconds, but it helps prevent any lumps from forming.

Keep stirring over low heat until the sauce thickens enough while remaining soft and fluid. Season with salt, grate in a little nutmeg, and whisk for another moment to make the sauce perfectly smooth and velvety.

Transfer the béchamel to a bowl and cover it with plastic wrap, pressing it directly against the surface. This will prevent a skin from forming while you wait to use it.

Tips and Storage
For a richer version, add 2 tablespoons of grated Grana cheese together with the butter and flour. Alternatively, you can finish it with a pinch of black pepper, turmeric, or curry, depending on your taste.
Béchamel can be stored in the refrigerator for about 3 days, covered with plastic wrap or kept in an airtight container.
Before using it, whisk it well by hand. If it has become too thick, add a few tablespoons of cold milk and whisk vigorously until it becomes smooth and creamy again.
Béchamel can also be frozen. To use it again, let it thaw slowly in the refrigerator, then whisk it well to bring it back to the desired consistency.
