From this point on, add the milk a little at a time, making sure each addition is fully incorporated before adding more. The milk can be cold straight from the fridge, so there's no need to bring it to room temperature first.

Keep stirring over low heat until the sauce thickens enough while remaining soft and fluid. Season with salt, grate in a little nutmeg, and whisk for another moment to make the sauce perfectly smooth and velvety.

Tips and Storage

Béchamel can be stored in the refrigerator for about 3 days, covered with plastic wrap or kept in an airtight container.
