Build the Creamy Sauce 💧
Place the pan with the rendered guanciale fat back over the heat and add a ladleful of pasta water. Stir or gently swirl the pan to combine the two and create an emulsion.
Add the drained pasta directly to the pan and finish cooking over medium-high heat, tossing and stirring frequently. Add a little more pasta water as needed until the sauce becomes smooth, glossy and well emulsified. 😉
4 Add the Pecorino Off the Heat 🧀
Once the pasta is al dente, turn off the heat and let it sit for a few seconds. Add the finely grated Pecorino Romano a little at a time, stirring vigorously as you go.
If the sauce becomes too thick, add a small splash of warm pasta water and continue tossing until you reach the right consistency. The residual heat will help everything come together.
Avoid adding the cheese while the pan is still over direct heat. The Pecorino can seize and form lumps — and that's definitely not the kind of creaminess we're after.
5 Add the Guanciale, Season and Serve 🖤
Add the crispy guanciale back to the pan and toss everything together until well combined.
Serve immediately and finish each plate with a generous sprinkling of Pecorino Romano and freshly ground black pepper.

Note
The creaminess of Pasta alla Gricia comes mainly from the final emulsification. Add the pasta water gradually rather than all at once. You can always add more if needed, but removing excess liquid is much harder.
If the sauce looks too loose at first, keep tossing the pasta before adding more Pecorino. The starch from the pasta and the movement of the pan will help the sauce thicken naturally.
For the best flavour, grind the black pepper just before using it. Add some while finishing the pasta and a little more over each plate just before serving for a fresher, more aromatic finish.
Pasta alla Gricia is best served immediately, while the sauce is creamy and the guanciale is still crisp. If you have leftovers, they can be refrigerated for up to one day, although this is definitely a dish that is at its best straight from the pan.
