Spaghetti with Clams: Traditional Italian Recipe

Servings: 4 Total Time: 30 mins Difficulty: Intermediate
Clams, garlic, and fresh parsley in a classic seafood pasta from Campania.

Spaghetti with clams is one of the best-known seafood pasta dishes from Campania. This classic white version relies on just a few ingredients: clams, garlic, fresh parsley, and extra-virgin olive oil, with the final result depending largely on how the clams and pasta are cooked.

The clams are opened quickly in a pan, then their cooking liquid is carefully strained and reserved. The spaghetti finishes cooking directly in this flavorful liquid with small additions of pasta water. As the pasta releases its starch, the sauce gradually emulsifies and coats the spaghetti without the need for additional fats.

The clams are returned to the pan only at the end to avoid overcooking them and keep them tender. Fresh parsley is added just before serving.

How to Make Spaghetti with Clams

  1. Check and Purge the Clams 🌊

Check the clams one by one and discard any with cracked or broken shells. Also discard any open clams that do not close when gently tapped or touched.

To check for shells that may be filled with sand, gently tap each clam against a cutting board. If a clam releases a noticeable amount of sand or appears unusual, discard it.

Rinse the clams thoroughly under cold running water, then place them in a large bowl of cold salted water, using approximately 30 g coarse salt for every 1 liter of water.

Let the clams purge for 2–3 hours, preferably in the refrigerator or another cool place. When ready, lift the clams out of the water rather than pouring the bowl out, so any sand settled on the bottom stays behind. Rinse the clams thoroughly once more.

  2. Infuse the Olive Oil with Garlic 🧄

Pour the extra-virgin olive oil into a large pan and add the 2 unpeeled garlic cloves, lightly crushed.

Heat over low heat for 2–3 minutes, allowing the garlic to gently flavor the oil without browning too much.

  3. Open the Clams and Strain Their Juices 🐚

Increase the heat, add the clams, and immediately cover the pan.

Cook for approximately 3–5 minutes, gently shaking the pan from time to time. As the clams open, transfer them to a bowl so they don't continue cooking unnecessarily.

Discard any clams that remain closed after cooking and remove the 2 garlic cloves, which will have already infused the oil and clam juices with their flavor.

Carefully strain the liquid released by the clams through a very fine-mesh strainer. For extra protection against sand, line the strainer with food-safe cheesecloth or a strong paper towel.

Set both the clams and their strained cooking liquid aside.

  4. Cook the Spaghetti Halfway 🍝

Bring a large pot of water to a boil. Salt it lightly, as the clam juices are naturally salty.

Cook the spaghetti for approximately half the cooking time stated on the package. Before draining, reserve at least 250–300 ml pasta cooking water.

The spaghetti should still be quite firm because it will finish cooking in the pan with the clam juices.

  5. Finish Cooking the Spaghetti in the Clam Juices 💧

Pour the strained clam juices back into the pan and return it to the heat. Add the partially cooked spaghetti and continue cooking, stirring and moving the pasta frequently.

Add a little reserved pasta water at a time as needed, allowing the liquid to be absorbed before adding more.

As the spaghetti finishes cooking, the starch released by the pasta combines with the clam juices and olive oil to create a glossy, naturally creamy sauce that coats the strands.

Taste before adding any additional salt, as the clam juices may already provide enough seasoning.

  6. Return the Clams at the End of Cooking 🐚

When the spaghetti is al dente and the sauce has reached a creamy consistency, return the clams to the pan.

Add freshly ground black pepper and toss gently for 30–60 seconds, just long enough to warm the clams through without overcooking them.

If the pasta looks too dry, add a small amount of reserved pasta water and toss again.

  7. Finish with Fresh Parsley and Serve 🌿

    Finely chop the parsley.
Turn off the heat and add the
finely chopped fresh parsley. Toss one final time to distribute it evenly.

Serve immediately, making sure each portion gets plenty of clams and sauce.

Note

Cook the clams as briefly as possible. Remove them from the pan as they open and return them only when the spaghetti is almost ready. Prolonged cooking can make clams tough and chewy.

Always strain the clam juices, even when the clams have been thoroughly purged. A small amount of sand can still settle in the cooking liquid and would otherwise end up in the finished sauce.

Salt the pasta water lightly. Clam juices are naturally salty and become more concentrated as the spaghetti finishes cooking. Taste the sauce before adding any additional salt.

The creamy texture should develop naturally as the pasta finishes cooking. There's no need for cream, butter, or cheese. The sauce comes together through the starch released by the spaghetti, the clam juices, and the extra-virgin olive oil.

Serve spaghetti with clams immediately. This dish quickly loses its ideal texture as it sits. If you have leftovers, refrigerate them in an airtight container and eat them within 1 day. Reheat gently in a pan with a very small amount of water if needed.
